Watermelon Wedge Salad

There is nothing more summery than a big slice of watermelon. We made a playful and absolutely delicious salad using a watermelon wedge layered with juicy orange, red onion and creamy goat cheese. Slice in to wedges and serve very cold on a warm summer day.

  • cold watermelon
  • oranges prepped and sliced
  • red onion thinly sliced
  • arugula
  • creamy goat cheese
  • olive oil
  • balsamic or red wine vinegar
  • sea salt


  1. Cut watermelon slice so it is round in shape and about 1 inch thick. Taking a pairing knife to the rind cut around to remove.
  2. Add thinly sliced oranges and onions to the top. Sprinkle with arugula and crumble your creamy goat cheese over the top.
  3. Drizzle lightly with olive oil and balsamic. Finish with sea salt.
  4. Slice with a cookie cutter or a knife into pizza shaped pieces and serve cold.
